All our lives we have been obsessed with Paella. Since we were kids, our first great culinary memories have always been those that had to do with this dish in question.
The answer to the next question “What is your favorite dish?” was always the same, and there was no doubt about it: the Paella. Just as it was never that clear when we were asked about our favourite color, or what we wanted to be when we grew up, when it came to eating, there was no doubt.

Why Paella?
On the one hand, there was its flavor, its texture, the fact that being a rice-based dish, you could eat incredible amounts because it wasn’t as filling. It is truly a delicious gem.
And on the other hand, as important as the flavor and the dish itself, it was what always surrounded the Paella. The feelings and memories surrounding it.
Those Sundays with the family, especially in summer, after the morning at the beach, and seeing all the cousins gathered around the rice, and later when we grew up, the friends, have always been one of our favorite sensations.
And it is that the stories, the memories, that are forged around Paella are forever, and they are the best. Just the ritual that surrounds this dish. The chef that prepares the Paella, who leaves it on the table, and is distributed in solidarity among all, as if we were waiting for a real treasure (which in fact it is, but gastronomic) to start the delight and the celebration.
Because in the end that is the important thing, those moments sharing and celebrating with the people you love the most.
A Moment of Realization
When we were growing up we began to travel the world, and realized how famous Spain was in general.
But besides the football clubs, the bull fighters and the topics, we were surprised on how very particularly Paella was also super famous, since it was offered everywhere (even though the quality… wasn’t the best for sure!), and the people who had been lucky enough to try an authentic one, were as delighted as any Spaniard to have had that experience.
However, it never ceased to amaze us that despite being so famous, people did not dare to do it later. It seems as if it were a mystical dish for which you had to have super powers to be able to cook it.
And why was that? It is for sure a dish that requires some skills, besides time, but it is definitely not impossible to do.
Because without a doubt, what struck us the most was observing how from Spain nobody had made a real effort to transmit all the beauty and importance of this dish, but only about the pure food, but also the importance that it has for our country, our culture, and for anyone in short.
In fact, internationally, we could observe how the clearest efforts to explain the dish were done by bloggers or international chefs, who with great effort and care, explained how to cook this wonderful dish, but obviously without the emotional and authentic connection of someone who has lived with the dish all his life and has managed to fall in love with it, and make his life much more magical thanks to Paella.
An Uncomfortable Obviousness
It was then that one thing became clear to us: people want Paella.
The world wants Paella.
They want to know about the dish, how it came to be, and most importantly, how to cook it. But it seemed, in spite of all, that they did not dare to prepare it.
At the same time and to top it all, if one surfed the internet, it seems that if there was already too much myth about the Paella dish itself, there was still more confusion about the recipes, how to cook, etc.
It was obvious to us that, as Spanish, felt the responsibility to create a home for those who wanted to learn about Paella, and create a place that not only would give the necessary information, but transmit the love and passion of such a wonderful dish.
So… what if there was a way to end this mess and for everyone to be able to get to know and cook their Paella in an easy way?
Paellita: An Inevitable Solution
But there was still something even more important: what if everyone could cook one in a simple way? Without all the complications and long hours of preparation?
And even more important, what if we could share with everybody else the Paella ritual? The real and true essence of our most popular dish, and a perfect ambassador of our way of life.
That is, to be able to enjoy the dish, removing the difficulty and time of preparation, and to be able to focus on having a good time, but especially on the stories and laughter, on sharing and enjoying with our family and friends while getting to love the true art of Paella.
Thus, with this idea in mind, Paellita was born.
So that everyone can easily have the ability to cook a Paella with the best flavor, and enjoy the most important thing about this dish: its ability to gather the people we love the most around the table with a natural, delicious and healthy dish to celebrate our lives while sharing.
